Tantalizing Tuesday

Below you will find a recipe of my own. I don't have the nutritional info for you, but believe it is easily incorporated into the FLFL plan. And, from family and friends, it's just plain good!!! We just had this at our Memorial Day barbecue, and it received rave reviews! No one even missed that this potato salad didn't contain mayonnaise or boiled eggs!!!

Texicanwife's Summertime Potato Salad


Summertime Potato Salad

Ingredients
approximately 2 pounds new potatoes, boiled and in jackets, sliced or diced [use your preference]
1 red bell pepper
1 green bell pepper
extra-firm tofu, drained, pressed, and cubed
2 medium tomatoes, diced
celery leaves, or cilantro, diced [about 1-1/2 tablespoons
1/4 cup fat free Italian salad dressing

In a large mixing bowl place all ingredients. Toss lightly.

Makes about 4 servings.

This recipe is easily enlarged for serving large crowds, and it is economical! And goes especially well with grilled Turkey Burgers on whole wheat buns for holiday cookouts! Add a side of bean salad for a well rounded plate! And YUM!!!
