Fruity Salsa

Fruity Salsa



Vibrant colors make this salsa catch the eye of many and the taste makes them take another dip into fruit heaven.



Ingredients:

 1 tablespoon snipped fresh mint

 2 teaspoon seasoned rice vinegar

 2 teaspoon lime juice

 1 teaspoon grated fresh ginger

 1/8 teaspoon crushed red pepper (optional)

 ½ cup chopped fresh pineapple

 ½ cup chopped mango or peach

 2 kiwifruit, peeled, quartered lengthwise, and sliced

1 (5 ounce) container or ½ of an 11 ounce can mandarin orange setions, drained (about ½ cup)



Preparation:

In a medium bowl, combine mint, rice vinegar, lime juice, ginger, and, if desired, crushed red pepper. Add pineapple, mango, kiwifruit, and mandarin orange sections; toss gently to coat.



Serves: 8 (¼ cup servings)



Approximate nutritional analysis per serving: 33.6 calories, .5 grams of protein, 8.4 grams of carbohydrates, .2 grams of fat, 1.3 grams of fiber, 1.5 mg of sodium

Note: This is especially good with baked white meats: chicken, turkey, fish, etc.
